What is in the bottle?

Two things. Dealcoholized wine, which is a California Pinot Grigio that has had its alcohol removed, and carbon dioxide, the gas that makes any sparkling wine sparkle. There is no grape juice, no concentrate, no natural flavors, no added acids, and no preservatives. That is why the nutrition line reads 10 calories and 0g sugar per 5 oz glass: the alcohol carried most of the calories out with it, and nothing sweet was put in to replace it.

The 0g is not a health claim. It is evidence. Most non-alcoholic wine has sugar because it was heated during dealcoholization and the recipe was rebuilt afterward. A short ingredient list is the sign that the rebuild never happened.

How is Clinq Zero made?

It starts as a finished California Pinot Grigio, chosen because it drinks light and dry the way a good prosecco does. The wine then passes through membranes at room temperature that separate the alcohol from everything else. The wine itself is never warmed. Only the separated stream of alcohol and water goes through a further step, and the wine’s own water is returned to it. Because the aroma compounds never leave the wine, there is no hole to fill and nothing to add back. Carbon dioxide is added at bottling for the bubbles, and the bottle is finished with a cork and cage like any sparkling wine.

What does Clinq Zero taste like?

Light, dry, and crisp, with fine bubbles and the acidity of the Pinot Grigio it started as. It is lighter in body than the same wine with the alcohol in it, because alcohol adds weight, and it is not sweet, because nothing sweet was added.
