Why do most non-alcoholic champagnes taste sweet?

Heat. Most producers warm the wine to pull the alcohol off. It is the cheap way to do it, and it carries the aroma out with the alcohol. What is left is thin, so sugar, grape juice, or flavoring goes back in to hide the hole. That is the sweet, faintly artificial taste people remember from the last bottle they tried, and the reason so many try one and never buy a second.

The fix is a process that never heats the wine. When nothing is lost to heat, nothing has to be added back, and the label stays short.

What should I check on the label before I buy?

Turn the bottle around. Three things tell you how it was made before you open it. Read the whole list, not one line of it: sugar is the easiest sign to spot, but the list is the story.

  1. Count the ingredients. Two is the goal: wine and bubbles. Five or more, with juice, concentrate, or “natural flavors,” means the wine was rebuilt after the alcohol came out.
  2. Find the sugar line. 0g means nothing was added back for body. Several grams per glass in a dry-style sparkling is usually there to cover for heat, and it sends you back to the ingredient list.
  3. Look for the process. If the brand does not say how the alcohol was removed, that is the answer.
