Two ingredients. Wine and bubbles.

Clinq Zero is a California Pinot Grigio with the alcohol filtered out at room temperature. Never heated, so nothing has to be added back. 10 calories a glass, 0g sugar, made in the USA. Read the back of the bottle. That is the whole story.

How it is made

Good pasta starts with good tomatoes. Good non-alcoholic sparkling starts with good wine.

The wine

It starts as wine I would drink with the alcohol in it

A California Pinot Grigio, chosen because it drinks light and dry like a prosecco. If the wine is not good enough to stand on its own, no process will save it. That is why the price is the price. It is that wine, plus one more step.

The step

The alcohol comes out cold. The wine is never heated.

Most non-alcoholic wine is warmed to pull the alcohol out. The heat cooks off the aroma, and the maker adds sugar, juice, and flavoring to cover what was lost. Ours is filtered at room temperature, so nothing is lost and nothing needs covering up.

I planned to add a little grape juice to soften it, the way most brands do. Then I tasted what the others had done with juice and sugar, and I refused. Two lines on the label: dealcoholized wine, carbon dioxide. 10 calories and 0g sugar per glass, because we never had to add any.

Who it is for

The bottle for Tuesday.

You love sparkling wine. Some nights you are not drinking. Sleep, a workout in the morning, a long week, a baby on the way, or no reason at all. You still want the pour, the sound, the same glass as everyone else at the table.

Every bottle you tried was sweet, or thin, or tasted like grape juice with bubbles, so you kept buying the least bad one. Clinq Zero is the bottle you keep in the fridge door next to the prosecco. Open it on a Tuesday. Bring it on Saturday. Nobody has to explain anything.

In Sicily, where I grew up, we open a bottle of bubbles for any reason. A baby. An exam passed on the third try. The tomatoes coming in early. The size of the reason does not matter. Everyone at the table gets a glass. That is what this bottle is for.

The founder story

"Fifteen years in this industry, five of them selling the machines that take the alcohol out of wine. I knew which method cooked the flavor and which one did not."

For five of those fifteen years I sold the equipment wineries use to remove alcohol. I saw how most non-alcoholic wine is made: heat goes in, aroma goes out, sugar and juice come back in to hide it. I also saw the one process that does not need heat, and I sold that system to the facility that now makes Clinq Zero.

So when I could not find a non-alcoholic sparkling wine I would put on my own table, I did not have to guess how to build one. I knew the wine had to be good enough to drink on its own. I knew the alcohol had to come out cold. And I knew that if we did those two things, there would be nothing to add back.

Clinq Zero is made from California wine and finished in the USA, not an import shipped across an ocean. Two ingredients on the label. The alcohol is the only thing we took out.
