Non-alcoholic mimosa, spritz, Bellini and French 75
The non-alcoholic mimosa starts with the bottle, not the juice.
Most non-alcoholic mimosas fail before the orange juice goes in, because the sparkling wine underneath was already sweet. Juice on top of sweet is syrup. Clinq Zero Sparkling Blanc is a dry California sparkling wine with the alcohol filtered out cold, never heated, nothing added back: two ingredients, 0g sugar, 10 calories a glass, under 0.5% alcohol. It does in a glass exactly what prosecco does in a glass, which is the whole job of the bottle in a mimosa, a spritz, a Bellini or a French 75.

Why the base decides the whole drink
A mimosa is two ingredients, so each one shows. Orange juice already carries around 10g of sugar per half glass. Put it on a sweet non-alcoholic sparkling and the drink turns heavy after two sips. Put it on a dry one and you get what a mimosa is supposed to be: bright, light, cold, and gone before you notice.
The reason so many non-alcoholic sparkling wines are sweet is heat. When the alcohol is boiled off, the aroma goes with it, and sugar, juice or flavoring goes back in to fill the hole. Clinq Zero takes the alcohol out cold, so nothing has to go back in. Turn any bottle around and read the whole label: two ingredients means it was never rebuilt.
Five drinks, one bottle
Every recipe below is for one glass. Keep the bottle in the fridge until the moment you pour; cold sparkling wine holds its bubbles, warm sparkling wine of any kind loses them fast. No measuring tools needed: a shot glass is about 1.5 oz.

01
The non-alcoholic mimosa
Brunch, showers, Sunday. The drink most people buy prosecco for.
You need
- 4 oz Clinq Zero Sparkling Blanc, very cold
- 2 oz fresh orange juice, cold
- A flute or a wine glass
Pour
- Juice first, then the wine, slowly down the side of the glass so it keeps its bubbles.
- No ice, no stirring.
- Two parts wine to one part juice is the classic ratio. Go 1 to 1 if the table likes it sweeter.
Swap the orange for grapefruit, or blood orange the way it is done in Sicily, where Anto grew up.

02
The Bellini
The Venice classic. Peach, not orange, and a little richer.
You need
- 4 oz Clinq Zero Sparkling Blanc, very cold
- 1.5 oz white peach purée (blend a ripe peach, or use a good unsweetened purée)
Pour
- Purée in the glass first.
- Add the wine slowly and give it one gentle stir from the bottom.
- Serve at once; the purée settles.

03
The spritz
Aperitivo hour. The bitter orange drink of every Italian terrace, without the alcohol.
You need
- 3 oz Clinq Zero Sparkling Blanc
- 2 oz non-alcoholic bitter aperitivo (there are several; pick one with a short label)
- 1 oz sparkling water
- Ice, an orange slice, a big wine glass
Pour
- Fill the glass with ice.
- Wine, then the aperitivo, then the splash of sparkling water.
- Orange slice on top.
The sugar in a spritz comes from the aperitivo, so read that label too. Starting from a 0g base keeps the drink light.

The French 75, without the gin
Lemon, a touch of sugar, bubbles. The gin is gone; the drink still works because it was always about the lemon and the sparkle.
You need
- 0.75 oz fresh lemon juice
- 0.5 oz simple syrup (equal parts sugar and water, dissolved)
- 3 to 4 oz Clinq Zero Sparkling Blanc, very cold
- A lemon twist
Pour
- Lemon juice and syrup in the glass. Stir once.
- Top with the wine.
- Twist the lemon peel over the top and drop it in.
Want it drier? Halve the syrup. The base has no sugar of its own, so you decide how much goes in.

- 1 oz sparkling water

Pour
- Clap the mint between your hands and drop it in the glass with the ice.
- Cordial, wine, sparkling water.
- Squeeze the lime in and drop the wedge.

And on its own, which is most nights
Pour it as cold as you can in the same glass you use for prosecco. Dry, crisp, a real cork, a real pour with the sound. This is how it will be poured at most of the tables it lands on, and it is the reason the cocktails above work: a base that tastes good alone tastes good with juice in it.

Questions people ask about non-alcoholic mimosas
What is the best sparkling wine for a non-alcoholic mimosa?
A dry one. Sweet non-alcoholic sparkling plus orange juice turns syrupy after two sips. Look for 0g sugar and a two-ingredient label; that tells you the wine was never heated and rebuilt. Clinq Zero Sparkling Blanc is a dry California sparkling with the alcohol filtered out cold, two ingredients, 0g sugar.
What ratio for a mimosa?
Two parts sparkling wine to one part juice is the classic. Juice first, then the wine poured slowly down the side of the glass. One to one if you like it sweeter. Never ice.
Can I make a mimosa with sparkling grape juice instead?
You can, but it will be sweet and it will taste like juice on juice, because that is what it is. A mimosa needs a dry, wine-based bottle underneath the orange to taste like a mimosa.
Does Clinq Zero Sparkling Blanc contain any alcohol?
It contains under 0.5% alcohol by volume, the legal non-alcoholic threshold and the same range as kombucha and many orange juices. The label states it plainly. We do not give medical advice; read the label and decide with your doctor.
How many mimosas from one bottle?
About seven, at 4 oz of wine and 2 oz of juice each. On its own, a 750ml bottle pours about five 5 oz glasses.
How is it shipped and how fast?
You get a tracking email the day your order leaves. Free shipping from four bottles, so a box of four or a case of six ships free. One or two bottles ship for $7.99. United States and Canada.
