Buying in real volume? The price moves with it. Tell us what a month looks like for your room and we will quote it. Suggested retail is $32 a bottle, so it sits with the imported European options rather than discounting your non-alcoholic set. Opened and stoppered, it holds its bubbles for three days in the fridge.

Why rooms add it

Five reasons it earns the space.

A dry pour is a second pour

Sweetness tires the palate and acidity refreshes it. That is why a sweet glass tends to be where a guest stops, and a bone dry one carries through a dinner. Pour it for a table and watch whether the second round gets ordered. We have not measured this, so judge it on your own first case.

It lifts the average, it does not discount it

At $32 retail it stands with the imported bottles. Adding it raises the average price of your non-alcoholic set instead of pulling it down, and the by-the-glass margin is in line with your wine list.

It answers the guest who reads the label

Two ingredients, 0g sugar, 10 calories a glass, under 0.5 percent alcohol. When a guest asks what is in it, the answer is short and it survives the check.

A wine-only set you could own

A clean-label non-alcoholic wine made only from wine, with nothing added back. Turn three bottles in the category around and read the backs. There is a sub-category here for the room that gets there first.

Your staff can explain it in one sentence

Real wine with the alcohol taken out cold, two ingredients, dry. Nothing to memorise, and a guest cannot argue with the back label.

It sells all year, not just in January

Celebrations, brunch, the table where one guest is driving or pregnant. Dry January is a spike, not the business.

How it tastes

Bone dry, with the acidity to hold a table.

Peach and grapefruit on the nose, resolving bone dry on the palate with the snap of a tart green apple. Fresh, high natural acidity and a fine, persistent bead carry a long, taut finish. No dosage and no added sugar of any kind.

It never tires the palate, so the second pour is as good as the first. That is what lets it hold through a long dinner, and it is why it sits well against salt, fat and anything fried.

Ways rooms are pouring it

Four places it already fits.

By the glass

Straight and cold, in a flute or a coupe. Five pours to the bottle. The colder it is, the longer the bubbles hold.

On the table, by the bottle

A heavy 750ml champagne bottle, gold foil, cork and cage. It opens with the same sound and stands in the same ice bucket.

Behind the bar

A dry base at 0g sugar, so the fruit you add is the only sugar in the glass. A mimosa that tastes of orange, a spritz that finishes clean.

Private dining and events

By the case, so nobody at a rehearsal dinner or a corporate table is handed the obvious substitute.

Samples and tastings

We will pour it with your team.

The brand is small enough that the founder still does this himself. A tasting next to what you serve now, and tasting notes written for your list so the description does not have to be invented at service.
