Sixty is how many I can get cold and hand-delivered across the Park Cities before September 30. Not a marketing number — it’s how many fit in the schedule. When the sixtieth is reserved, this closes and the rest goes to the country.

CLINQ ZERO was started here, because Dallas is home. The first run is bottled this September — and sixty cases of it aren’t going to a distributor or onto a shelf. They’re going to sixty tables in the Park Cities, cold, by hand, before the brand goes on sale nationally.

Which means for one season, there are sixty houses in this neighborhood that have it. If you’re the one who brings something good, this is yours before it’s anyone’s.

What it tastes like

Like wine. Because it starts as wine.

It begins as a fine California Pinot Grigio — a real wine, made properly, the kind you’d pour on its own. So it tastes like one. Green apple and pear, a lift of citrus, and the clean dry finish that grape is known for.

Then the alcohol comes out without heat, and it’s carbonated. That’s the whole process. No flavoring added, no sugar added to cover a flat base — because the heat never destroyed anything that needed covering.

A crisp, dry sparkling wine that earns its place on the table and stands up to the occasion you opened it for. Lower in calories and lower in sugar than traditional sparkling wine.

What happens at the table

Someone will pick it up and ask.

They always do. It’s the bottle nobody recognizes, and by the second pour somebody has turned it around to read the back.

Here’s what you tell them

“Most non-alcoholic wine gets cooked — they boil the alcohol off, and the heat takes the aroma with it. So they add flavoring back to cover it. This one was never cooked.”

That’s the whole thing. We take the alcohol out without heat, so the aromatics stay where they are and no flavoring has to be added to hide what was lost.

It costs more to make. That’s the entire product.

Am I buying something that exists yet?

Not yet — that’s the point. You’re reserving one of sixty cases from the first run, which is bottled this September and delivered by the 30th. Reserving now is how you get it before it goes on sale nationally.

What does it taste like?

Like wine, because it starts as wine — a fine California Pinot Grigio. Green apple, pear, a lift of citrus, and a clean dry finish. The alcohol is the only thing we took out.

Is this actually wine?

Yes. It’s made as wine first, then the alcohol is removed and it’s carbonated. The statement of identity on the bottle is Dealcoholized Sparkling Wine.

Is it sweet?

No. Lower in calories and lower in sugar than traditional sparkling wine, because no sugar is added to cover a flat base.

Will it look right on the table?

That’s the point. A 750ml glass bottle with gold foil that you’d set down next to anything else you’d pour — not a can, not a wellness label.

What does chilled delivery mean?

The case leaves cold and arrives cold, by hand, in a cooler. It’s ready the moment it reaches you.

When exactly will it arrive?

By September 30. I’ll text you beforehand and you’ll pick the window.

Can I reserve more than one case?
